Asiago DOP (Protected Designation of Origin) is a traditional Italian cow's milk cheese produced exclusively in a specific region of northeastern Italy. The production area spans the entire provinces of Vicenza and Trento, as well as parts of the neighboring provinces of Padua and Treviso. Its strictly regulated production process is overseen by the Consorzio Tutela Formaggio Asiago.
